Upside-down Caramelized Apple Almond Cake
Ingredients
- 2 medium apples, thinly sliced
- 1 cup date caramel (Recipe on our website!)
- 1 cup almond flour
- 2 cups oat flour
- ½ cup coconut sugar
- 2 large eggs
- ¼ cup pure sea moss gel
- ⅓ cup Full-fat greek yogurt
- ⅓ cup coconut oil (or olive oil)
- ⅓ cup apple sauce
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon fine salt
- 2 teaspoons vanilla extract
Steps
- Preheat oven to 350°F (175°C). Line the bottom of a 9-inch cake pan with parchment and lightly grease the sides.
- Spread some date caramel evenly over the bottom of the pan.
- Arrange the apple slices in a single, slightly overlapping layer over the caramel, add more date caramel evenly on top.
- In a medium bowl, mix together almond flour, oat flour, coconut sugar, baking powder, baking soda, and salt
- Add in eggs, sea moss gel, greek yogurt, oil, apple sauce, and vanilla extract. Mix until well combined
- Pour the batter over the apples and caramel, smoothing the top.
- Bake for 30–35 minutes, or until top is golden and toothpick inserted in the center comes out clean
- Let the cake cool for 10-15 minutes before running a knife along the edges and flipping to reveal your upside down apple cake
