Upside-down Caramelized Apple Almond Cake

Ingredients

  • 2 medium apples, thinly sliced
  • 1 cup date caramel (Recipe on our website!)
  • 1 cup almond flour
  • 2 cups oat flour
  • ½ cup coconut sugar
  • 2 large eggs
  • ¼ cup pure sea moss gel
  • ⅓ cup Full-fat greek yogurt
  • ⅓ cup coconut oil (or olive oil)
  • ⅓ cup apple sauce
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon fine salt
  • 2 teaspoons vanilla extract

Steps

  1. Preheat oven to 350°F (175°C). Line the bottom of a 9-inch cake pan with parchment and lightly grease the sides.
  2. Spread some date caramel evenly over the bottom of the pan.
  3. Arrange the apple slices in a single, slightly overlapping layer over the caramel, add more date caramel evenly on top.
  4. In a medium bowl, mix together almond flour, oat flour, coconut sugar, baking powder, baking soda, and salt
  5. Add in eggs, sea moss gel, greek yogurt, oil, apple sauce, and vanilla extract. Mix until well combined
  6. Pour the batter over the apples and caramel, smoothing the top.
  7. Bake for 30–35 minutes, or until top is golden and toothpick inserted in the center comes out clean
  8. Let the cake cool for 10-15 minutes before running a knife along the edges and flipping to reveal your upside down apple cake
