Refined-Sugar Free Passion Fruit Jam with Mango Sea Moss Gel

  • Passion fruit pulp (3-8 fresh passion fruits)
  • 1/3 cup UNCRACKED MANGO SEA MOSS GEL
  • 2–3 Tbsp maple syrup (adjust to taste)
  • Juice of 1 small lemon

Steps

  1. Add **passion fruit pulp**, **lemon juice**, and **maple syrup** to a small saucepan
  2. Bring to a gentle simmer over **medium-low heat**, stirring often - Simmer for **8–10 minutes**, until slightly thicker
  3. Remove saucepan off heat, let it cool for 5 minutes before whisking in the sea moss gel to preserve all the nutrients
  4. Let cool to room temperature, or in the fridge — it will **thicken more as it cools** thanks to the sea moss.
  5. Store in the fridge for up to 2 weeks
