Energizing Maca & Coconut Clustery Granola
Ingredients
- 2 cups rolled oats
- 1 cup almond flour
- ½ cup quinoa
- ½ cup unsweetened coconut flakes
- ¼ cup ground flax seeds
- ¼ cup maca powder
- ½ teaspoon fine salt
- ¼ cup pure sea moss gel
- ⅓–½ cup honey (depending on how sweet you like it)
- ⅓ cup coconut oil, melted
- 2 teaspoons vanilla extract
Steps
- Preheat oven to **285°F (140°C)**. Line a large baking sheet with parchment paper
- In a large bowl, whisk together sea moss gel, honey, melted coconut oil, and vanilla until smooth and uniform.
- If the mixture hardens, microwave for 30 seconds and mix again.
- Add in oats, almond flour, quinoa, coconut flakes, ground flax, maca powder, and salt.
- Spread the mixture evenly on the prepared baking sheet, pressing lightly into an even layer.
- Bake for **about 1 hour**, flipping the granola after 40 minutes to prevent burning on the edges.
- Let the granola cool completely on the tray (this is when it gets crunchy).
- Break into clusters and store in an airtight jar at room temperature for up to 2 weeks, or in the freezer for longer.
