Energizing Maca & Coconut Clustery Granola

Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • ½ cup quinoa
  • ½ cup unsweetened coconut flakes
  • ¼ cup ground flax seeds
  • ¼ cup maca powder
  • ½ teaspoon fine salt
  • ¼ cup pure sea moss gel
  • ⅓–½ cup honey (depending on how sweet you like it)
  • ⅓ cup coconut oil, melted
  • 2 teaspoons vanilla extract

Steps

  1. Preheat oven to **285°F (140°C)**. Line a large baking sheet with parchment paper
  2. In a large bowl, whisk together sea moss gel, honey, melted coconut oil, and vanilla until smooth and uniform.
  3. If the mixture hardens, microwave for 30 seconds and mix again.
  4. Add in oats, almond flour, quinoa, coconut flakes, ground flax, maca powder, and salt.
  5. Spread the mixture evenly on the prepared baking sheet, pressing lightly into an even layer.
  6. Bake for **about 1 hour**, flipping the granola after 40 minutes to prevent burning on the edges.
  7. Let the granola cool completely on the tray (this is when it gets crunchy).
  8. Break into clusters and store in an airtight jar at room temperature for up to 2 weeks, or in the freezer for longer.
