High-Fiber Crunchy Pomegranate Psyllium Jam
Ingredients
- 1½ cups pomegranate arils (from ~2 pomegranates), divided in half
- ½ cup strawberry beet sea moss gel
- maple syrup or honey *(optional, to taste)*
- 1 tablespoon fresh lemon juice
- 1 teaspoon psyllium husk
Steps
- Add half of the pomegranate arils to a blender and blend until smooth
- Pour the blended mixture through a fine mesh strainer into a small pot. Use a spoon or spatula to press out as much liquid as possible, leaving the hard seeds behind. (Pro tip: use the seeds as a yogurt or oatmeal topping for extra fiber and less waste!)
- To the saucepan, add in lemon juice and sweetener to taste, simmer on low heat
- Remove from heat and allow to cool for 5 minutes before whisking in sea moss gel
- Stir in the remaining pomegranate arils into the strained liquid base.
- Sprinkle the psyllium husk evenly over the mixture while whisking constantly to avoid clumps.
- Transfer to a clean jar, cover, and chill for 30–60 minutes to fully set and let the flavors meld.
