Harvest Oat Crumble Bars with Fig Jam Filling
Ingredients
- 10 ripe figs, chopped (about 1½ cups)
- 2 tbsp orange or lemon juice
- 1–2 tbsp water (just enough to help it blend)
- 1–2 tsp honey, maple syrup, or other sweetener (optional)
- Pinch of salt
- 1 cup rolled oats
- ½ cup all-purpose flour
- ¼ cup protein powder (vanilla or unflavored)
- ¼ cup sea moss gel (acts as binder and moisture source)
- 2 tbsp coconut oil or butter, melted
- 2 tbsp maple syrup or honey (for sweetness & cohesion)
- ½ tsp cinnamon
- Pinch of salt
Steps
- Add figs, orange juice, and water to a saucepan over medium heat.
- Cook 5–8 minutes, mashing with a fork until jammy. Add a touch more water if needed and let cool.
- Preheat oven to 350°F (175°C). Line a small baking dish (8x8 or loaf pan) with parchment paper.
- In a bowl, mix oats, flour, protein powder, cinnamon, and salt.
- Stir in melted coconut oil or butter, sea moss gel, and sweetener. Adjust texture by adding a spoon of flour if too wet or a bit of water if too dry.
- Press ¾ of the mixture firmly into the pan as the base.
- Spread fig jam evenly on top, then crumble remaining oat mixture over it.
- Bake 25–30 minutes until golden around the edges, then cool completely before cutting into bars.
