
Whole Wheat Einkorn Chocolate Chip Banana Bread
Ingredients
- 1 cup mashed ripe bananas (about 2–3 bananas)
- 2 eggs
- ½ cup maple syrup (or honey)
- ⅓ cup melted coconut oil or extra‑virgin olive oil
- 2 tbsp Pure Sea Moss Gel
- 1 tsp vanilla extract
- 1¾ cups whole wheat flour
- ½ tsp ground cinnamon (optional but recommended)
- ½ tsp salt
- 1 tsp baking soda
- ½ cup optional nuts, chocolate chips, or blueberries
Steps
- Preheat oven to 350°F (165°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- In a large bowl, whisk together the mashed bananas, eggs, maple syrup, oil, vanilla, and sea moss gel until smooth.
- Sprinkle in baking soda, salt, and cinnamon; whisk just until combined.
- Fold in whole wheat flour until no streaks remain (do not overmix!).
- Gently fold in any mix‑ins (nuts, chips, or berries).
- Pour batter into the pan and smooth the top.
- Bake 55–60 minutes, until a toothpick comes out clean. Cool 10 minutes in pan, then transfer to a rack.
