Chickpea Peanut Butter Cookie Bars

Ingredients

  • 1 can chickpeas, rinsed & drained
  • ½  cup peanut butter
  • ½  cup maple syrup
  • ¼ cup oat flour 
  • 2 tbsp Uncracked Pure Sea Moss Gel
  • Chocolate chips, measured with your heart
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • Pinch of salt

Steps

  1. Preheat oven to 350°F (180°C) and line an 8×8-inch pan with parchment.
  2. In a blender, combine chickpeas, peanut butter, maple syrup, sea moss gel & vanilla until smooth.
  3. Transfer to a bowl, then stir in oat flour, chocolate chips, baking powder & salt until just combined.
  4. Pour batter into the pan, smooth the top, and bake 30 minutes until edges are golden.
  5. Let cool in pan, then slice into bars.
