
Chickpea Peanut Butter Cookie Bars
Ingredients
- 1 can chickpeas, rinsed & drained
- ½ cup peanut butter
- ½ cup maple syrup
- ¼ cup oat flour
- 2 tbsp Uncracked Pure Sea Moss Gel
- Chocolate chips, measured with your heart
- 2 tsp vanilla extract
- 2 tsp baking powder
- Pinch of salt
Steps
- Preheat oven to 350°F (180°C) and line an 8×8-inch pan with parchment.
- In a blender, combine chickpeas, peanut butter, maple syrup, sea moss gel & vanilla until smooth.
- Transfer to a bowl, then stir in oat flour, chocolate chips, baking powder & salt until just combined.
- Pour batter into the pan, smooth the top, and bake 30 minutes until edges are golden.
- Let cool in pan, then slice into bars.
